Handmade Pasta Florence

Vegan & vegetarian · Oltrarno, Florence

A vegan cooking class in Florence, with nothing left out.

Tuscan pasta was plant-based long before anyone had a word for it: pici are flour, water and olive oil. Vegetarians cook the class exactly as it is. Vegans tell us when they book, and the eggless dough, the filling and the dessert are ready that morning. Neither costs a cent more.

Cooking class menu

  • Fettuccine with Tomato and Basil or Cacio e Pepe (vegan: tomato and basil or aglione)
  • Ravioli with Butter and Sage (vegan: potato filling, olive oil and sage)
  • Your own Tiramisù
  • Glass of Wine or non-alcoholic beverage
  • Glass of Limoncello or coffee
  • Water

Vegetarian needs no changes: skip the amatriciana, the only sauce with meat, and the whole menu is meat-free at no extra charge. For vegans the dough goes eggless and the sauce is tomato and basil or aglione, both dairy-free; the ravioli are filled with potato, garlic and parsley, the Mugello way, and dressed with olive oil and sage instead of butter; the tiramisù is adapted too, all at no extra charge. Tell us when you book, not on the day: egg dough is made at the same table, so this is not a vegan kitchen.

What’s included

  • Theoretical and hands-on cooking instructions
  • English speaking chef
  • Fresh ingredients
  • Equipment provided (workspace, apron, knife, and rolling pin).

When the preparation is done, you sit down at the table. The restaurant's kitchen cooks everything you made, and you eat it with a glass of wine, in the center of Florence, with the people who made it with you.

What’s not included

  • Making the sauce
  • Extra food and drinks

Is the class vegetarian as it stands?

Yes, and nothing about it is a workaround. The menu is fettuccine with a sauce you choose, ravioli with butter and sage, and your own tiramisù. Pick tomato and basil or cacio e pepe and every plate is vegetarian; the amatriciana is the only option with meat, and it is a choice you make on the day, not a default. There is no surcharge, because nothing is being substituted.

Tell us in advance that someone is vegetarian and the sauce is ready before you arrive. Mixed tables work exactly like any other class: everyone cooks side by side and sits down together at the end.

How does a vegan pasta class work?

It starts with the dough. Ours normally uses egg; yours goes eggless, which is not a compromise but the oldest pasta in Tuscany. Pici, the hand-rolled noodle of the Sienese hills, have always been flour, water and olive oil, nothing else, and learning to read a dough without egg is its own skill.

The sauce is tomato and basil or aglione, the Tuscan garlic-and-tomato sauce, both dairy-free as they are. The ravioli swap ricotta for the filling Tuscany already uses in the Mugello valley, potato with garlic, parsley and nutmeg, and reach the table with extra-virgin olive oil and sage instead of butter. The tiramisù is adapted rather than dropped. Tell us when you book, so the ingredients are in the kitchen that morning. None of it costs extra.

Honest about the kitchen

This is a working pasta kitchen: egg dough, cheese and butter are on the same table on the same day, so we are not a vegan kitchen and will not pretend to be. If that matters to you, say so when you book and we will talk it through, or take the kitchen privately as The Family Long-Table.

Good to know

  • Coeliac as well? Read how the gluten-free class works and tell us both needs when you book.
  • Prefer dinner? The 18:00 slot runs the same class into the evening instead of lunch, subject to availability.
  • We email you the recipes afterwards, so the eggless dough works in your own kitchen too.
  • Cooking from home instead? The live online class runs from this same kitchen.

Good to know.

Is the class suitable for vegetarians?

Yes, with no changes and no surcharge. Pick tomato and basil or cacio e pepe for your fettuccine and the whole menu is vegetarian: the ravioli are butter and sage, the tiramisù is the classic one. Only the amatriciana option contains meat, and it is a choice you make on the day, not a default.

Can you do a vegan pasta class?

Yes, with advance notice. The dough goes eggless, which is how Tuscany has always made pici: flour, water and olive oil, nothing else. The sauce is tomato and basil or aglione, both naturally dairy-free; the ravioli get a potato filling with olive oil and sage, and we adapt the dessert rather than drop it. There is no surcharge. Tell us when you book so the ingredients are in the kitchen that morning.

Is there a surcharge?

No. Vegetarian or vegan, it is €95, the same as everyone else at the table. We would rather you came and cooked with us than paid extra for leaving out the egg.

Can I book with friends who eat everything?

Yes. Everyone cooks the same class side by side at the same table, and everyone sits down to eat together at the end.

Is the kitchen fully vegan?

No, and we would rather say so up front. Egg dough, cheese and butter are used at the same table on the same day. If that is a problem for you, tell us when you book, or book the kitchen privately.

How do I book and tell you about my diet?

Use the "Book this class" button to build your request. It opens a WhatsApp chat with the details filled in; add your dietary needs there, or email ciao@handmadepastaflorence.com, and we will confirm exactly what you will cook.

When do I pay, and how?

Nothing is charged when you send a request. Once we confirm your date, a 30% deposit by bank transfer or card link (Stripe) holds your place. You pay the rest in cash on the day of the class, or by transfer beforehand if you prefer.

What's your cancellation policy?

Free cancellation up to 48 hours before your class, no charge. Need a new date instead? We're happy to reschedule at no cost up to 24 hours before your class. Cancellations inside 48 hours, or no-shows, may be charged the full class price. Full details on our cancellation policy page.
