Why does pasta making work as a team building activity?
Fresh pasta is the rare team activity where nobody can hide behind a screen and nobody needs prior skill. Everyone starts with the same pile of flour, everyone’s first pici is crooked, and an hour later the table is covered in something the team actually made together. Then you eat it, which beats a debrief.
Of all the food teambuilding ideas in Florence (wine tastings, tasting walks, another aperitivo), this is the one where nobody stands at the back watching. And the kitchen is exclusively yours: no strangers, your pace, your dietary needs handled in advance.
What your team actually cooks
Every team makes the same three things by hand: fettuccine with a sauce the group picks (tomato and basil, cacio e pepe, or amatriciana), ravioli with butter and sage, and its own tiramisù. A workspace, apron, knife and rolling pin are set out for each person, and the ingredients are fresh that morning.
When the rolling is done the kitchen cooks what the team made, and everyone sits down together with a glass of wine or a non-alcoholic drink, then limoncello or coffee. The one thing the team doesn’t make is the sauce itself — that’s on us, so the session stays on the pasta.
How the session runs
The format follows our signature class: hands-on from the first minute, two head chefs hosting, and a sit-down lunch of what the team made, with local wine if you want it. As a private booking, timing is flexible around your agenda; most teams take the class in place of a lunch or as the evening wind-down of an offsite.
